I want to make my own concord wine and I need some help?

We have a recipe to make concord wine from grape juice concentrate that you buy at the grocery store. We aren’t totally sure how to go about making it. We have all the supplies that we ordered from a place in texas called Defalcos. Now we need to know what is a must, how do we start out with the process, and what do we do with the hygrometer? I hope I spelled that right. Please explain in as much detail as you can b/c I really don’t know what I’m doing.

Follow your recipe…what part does it not tell you?

Simply put, mix the grape juice concentrate with water and whatever other ingredients you have, based on the recipe.

Add your yeast, according to the recipe. This mixture is your “must” Measure the “specific gravity” of a sample with your hydrometer (with a ‘d’) and record what it reads (should be somewhere around 1.065 to 1.100 plus or minus). This is your “starting gravity” DO NOT put the sample back in your fermentor…throw it away, it’s no longer sterile.

Put your fermentor full of must away for a week or two…if you got the kind that bubbles, until it stops bubbling. If you have the kind that doesn’t bubble, then keep an eye out for when there’s a distinct layer of sediment on the bottom.

Siphon the liquid off of the sediment into another “secondary” fermentor and let it sit for a few weeks. Take another sample while you’re siphoning. Use your hydrometer and measure the specific gravity again. This is your “final gravity” and the difference between startig and final gravities will tell you how much alcohol your wine now contains (there should be a conversion chart that comes with your hydrometer). Provided that you used impeccable sanitation, and good ingredients (and a good recipe) then you should be able to put together a decent wine this way.
